From Ethiopia a spicy chicken marinated fenugreek, cardamom, and nutmeg

Goat Tagine
Tender goat simmered with Moroccan spices, apricots & dates 

Tilapia with Onion & Tomato
Seasoned tilapia with grilled onion, tomato and African pepper sauce

Irio (Kenyan)
Mashed potatoes, corn, peas and greens

Plantain and Bean Porridge (Nigeria)
Black eyed peas, plantains, sweet potatoes and red palm oil
